As a lover of Singaporean (and Latino) culture, I also find this mystery chicken dish fascinating so I looked into it a bit. This blog

(scroll a bit) includes a photo and a humorous description, "Tender Cuban chicken thigh with superb gravy! Another Latino contribution to New York." New York New York is a mall restaurant that serves dubious “American” food and their menu is made to look like the New York Post (with a bizarre font). From my dining experiences in Singapore, I don’t suspect that the food is terribly authentic because there just aren’t any Latinos in S.E. Asia. The few Mexican restaurants they have are a strange fusion of Tex-Mex and BBQ. Though strangely, just yesterday I read about a supposedly accurate Mexican restaurant in Singapore so who knows? http://chubbyhubby.net/blog/real-mexican/

Krista, thanks so much for the enlightenment. I suspected as much on the "authenticity" front, and yet the name was so alluring, I just couldn't resist.
